Vegan Options on Campus

This week has been a bit weird for me as I started working out in earnest, as promised. On Saturday, I did a 2-hour walk on the treadmill and ended at just over 6 miles. Sunday, I could barely move so I didn’t do an actual work out, but I still met my calorie burn. Monday, we started our first aerobics class of the semester with traditional Hi-Lo, and it kicked my butt. I wasn’t quite used to some of the movements, but I think I did pretty well overall. I only had to modify one of the movements in order to complete it, which was called Up-Downs. I just wasn’t ready for that move yet. Yesterday, I did 4.3 miles on the treadmill in 4 minutes and 45 seconds off my previous time. Unfortunately, I hadn’t broken in my new shoes enough to have worn them for that long of a walk. I now have the biggest and most painful blister of my life on my heel and another medium sized one on my pinkie toe. I took today off because I had to study for my first Microbiology exam of the semester, so I woke up at 4am and studied until I had to leave. When I finished my exam, I was famished because it had been about 5 hours since I had eaten, and I found a great surprise.

I decided to run to KnightStop in the student union because in the past I know they have at least had fresh fruit, so I thought I would see what they have added. I was ecstatic to find in the refrigerator a big selection of vegan options from Sunneen, Macro Vegetarian, and a few other brands. I also found a decent selection of freeze-dried fruit, which is my new favorite food because you can eat a good-sized portion for very little calories. I picked Asian pear, and it was great. I also picked up an Odwalla Red Rhapsody to make some smoothies with this week. For my entrée, I decided on an Avocado Hummus Sandwich from Sunneen. I waited to eat my sandwich until I got home because I decided I wanted to crisp up the bread before I ate it. I sprayed a non-stick pan with just a squirt of non-stick cooking spray and grilled up the sandwich like a grilled cheese. The bread got awesomely crunchy, the hummus warmed through, and the avocado was like butter. It was a great lunch.

Tonight was the first night this week that I cooked, and it was a beautiful plate. I made the Sesame Roasted Asparagus and the Balsamic-Glazed Carrots and Kale from Vegan Planet. They both turned out tasting wonderful, but I think I will cut the oil in the asparagus because it was a little oily to me. I did cut the oil in the carrots with kale, so it turned out very tasty. When I cut the oil, I used the steaming liquid from the precooking of the carrots and kale so that none of the nutrients were lost. We finally tried the Smoked Apple and Sage sausages from Field Roast, and we both enjoyed them thoroughly. I also threw in some whole-wheat couscous for our grain. Overall, it was a nutritious and delicious dinner. Now, I have some great leftovers 🙂

Now, let’s get down to the nitty gritty of numbers for the week. I actually weighed in yesterday but ran out of time to post due to studying. I was really stoked to see that I had lost another pound. I am hoping that with all of the added exercise for this week that next week’s numbers will be even better. I will also be posting new pictures and measurements at the end of next week since it is the beginning of next month. I am hoping to see some movement in the numbers since my clothes have been fitting differently, but we shall see. Tomorrow I will be back on the treadmill for probably about 3 miles. Onward and upward, right?
